Why this phrase

Tourists arrive expecting plates drifting past, and at most chains that stopped years ago. Genki Sushi converted the large majority of its domestic stores to order only, Kappa Sushi ended conveyor-lane service in 2020, and Sushiro never resumed free-flowing plates after 2023. Kura Sushi is the big holdout that still rotates every plate under its antibacterial covers, and small local shops often still do too, so the rule is: look before you reach. If plates are sliding past in an order-only store, that is someone else's order riding the express lane. Kōfuku sits down and grabs at a passing plate like the guidebook told him to; Hana, working the floor, stops his hand and points at the touch panel. The fix is knowing you order, you don't grab.
